To Make the Oreo Biscuit Base
For the biscuit base you need to do the exact same as you did for the No-bake Oreo Cheesecake. Start by melting the 1/2 Cup butter in the microwave (20 seconds), and while that’s doing crush your 25 Golden Oreo biscuits into crumbs. I use my Russell Hobbs Aura 6-in-1 blender, which is honestly amazing!
You then want to combine the crumbs with the melted butter, and mix well until the butter is completely coating the Oreo crumbs. Press the Oreo crumbs into the bottom of the well-greased 20cm springform pan, and press some of them a little way up the side of the pan as well to create the pie crust, and then put into the refrigerator to firm while you make the filling.
To Make the Caramel Filling
For the caramel filling you need to melt the other 1/2 cup of butter with the 1/2 cup of dark brown sugar over a low heat. Make sure you stir it constantly until all the sugar has dissolved (you don’t want a lumpy filling). Then add in the condensed milk and bring it to a rapid boil. You want to keep it on a rapid boil for about two minutes, which will give you a well set caramel that’s still nice and soft and chewy.
Take your base out of the fridge, and pour the caramel sauce into the pie crust. You might have some leftover – just eat it all. Trust me. It’s so worth it. Once you’ve done this you then need to chop up your three bananas into thin slices, and cover the caramel with them (literally cover it, until you can only see caramel around the edges). Then put it back into the fridge for an hour or so to set.
To Make The Cream Topping
Once it’s set and you’re ready to serve it, take it out of the fridge and carefully remove it from the springform tin. Then chop 10 Golden Oreos (or Peanut Butter Oreos), in half, and place them on top of the banana.
Next up whip your whipping cream using an electric whisk. You can use the one that comes with the Aura 6-in-1, however I actually used my Kitchenaid hand mixer as I just prefer it. Cover the whipped cream over the toppings, make sure it’s nice and thickly coating the biscuits and bananas. Then feel free to decorate with some oreo crumbs, chocolate sauce, and extra oreos! And ta-da, all done!
This recipe is honestly so simple but tastes absolutely amazing! The Golden Oreos work perfectly with the banoffee flavour, and the pie isn’t too rich due to the condensed milk in the gooey caramel sauce.
